Did you know the Aviation cocktail is over 100 years old?
The Aviation cocktail dates back to the early 20th century with a recipe that blends sweet, sour and floral notes.
Now, more widely known as ‘the Parma Violet cocktail’, thanks to the surge in retro-sweet flavoured gins! Check out this week’s newest find the Hubba Bubba hit.
Despite its now retro sweet connection, the original Aviation had quite the reputation in the cocktail world.
The Aviation cocktail was first published in Hugo R Ensslin 1916 ‘Recipes for Mixed Drinks’.
Ensslin was the head bartender at New York’s Hotel Wallick. His recipe used Crème de violette with the liqueur’s purple colour alluding to the colour of the sky, giving the drink it’s air inspired name.
The recipe was created in the early years of aviation, the same year that the first British airline company, Aircraft Transport and Transport Ltd, was registered the first airline to operate a regular international flight.
The cocktail then featured in the Savoy Cocktail Book in 1930, with author Harry Craddock omitting the liqueur, mostly likely due to its scarcity in Europe and America.
This resulted in the Aviation, being sold without one of its central ingredients for over 40 years, resulting in bartenders still debating its place in the drink.
During the early days of the cocktail renaissance, the drink was known as a ‘hidden gem’ in the bartending world with the cult drink becoming a favourite amongst the bar world’s “in crowd”.

- 25ml Boe Violet Gin
- 20ml Cherry Liqueur
- 25ml Lemon Juice
- 10ml Sugar Syrup
Method: Into your shaker, pour your gin, cherry liqueur, lemon juice and sugar syrup. Fill the shaker with cubed ice and shake vigorously. Place a cherry in the bottom of a Martini glass then strain your cocktail into the glass, avoiding adding any ice!
